Is it just me or does everyone zealot rush? Its driving me crazy how fast they can get everything setup and have a full on army in under 4-5 minutes.

I would recommend watching some replays of your games, and of high level play games. Some key things to look at...

1)how many workers did you produce vs the other team?

2)Did you scout their base to find out where they were, and what buildings they were making?

3)Did you continue to repeat #2 throughout the game?

4)Did you use the knowledge in #2 and #3 to properly counter the units/buildings you saw?

In your situation, Marauders with the slow upgrade are the proper counter. You can kite zealots around all day doing this.
